A survey of writers around the world by the PEN American Center has found that a significant majority said they were deeply concerned with government surveillance, with many reporting that they have avoided, or have considered avoiding, controversial topics in their work or in personal communications as a result. The findings show that writers consider freedom of expression to be under significant threat around the world in democratic and nondemocratic countries. Some 75 percent of respondents in countries classified as “free,” 84 percent in “partly free” countries, and 80 percent in countries that were “not free” said that they were “very” or “somewhat” worried about government surveillance in their countries. The survey, which will be released Monday, was conducted anonymously online in fall 2014 and yielded 772 responses from fiction and nonfiction writers and related professionals, including translators and editors, in 50 countries. Smaller numbers said they avoided or considered avoiding writing or speaking on certain subjects, with 34 percent in countries classified as free, 44 percent in partly free countries and 61 percent in not free countries reporting self-censorship. Respondents in similar percentages reported curtailing social media activity, or said they were considering it, because of surveillance. The survey included only writers affiliated with PEN, the writers’ group emphasizing freedom of expression, and others the group was able to contact, and did not necessarily reflect the views of all writers. But the executive director of the PEN American Center, Suzanne Nossel, said that the findings, taken together with those of a 2013 PEN survey of writers in the ed States, indicate that mass surveillance is significantly damaging free expression and the free flow of information around the world. “Writers are the ones who experience encroachments on freedom of expression most acutely, or first,” Ms. Nossel said. “The idea that we are seeing some similar patterns in free countries to those we’ve traditionally associated with unfree countries is pretty distressing.”“作家是对言论自由的损害最为敏感的群体,或者说是最早感受到的群体,”诺塞尔女士说,“我们正在自由国家看到一些似曾相识的模式,传统上它们是与非自由国家联系在一起的,这让人感到相当不安。”The results of the survey, which was conducted by the nonpartisan research firm FDR Group, arrive amid continuing debate over the data collection programs of the National Security Agency, as well as increased broader concern about the erosion of privacy in the wake of various leaks and hacks, including the recent cyberattack on Sony. The British novelist Hari Kunzru, a member of English PEN currently living in New York, said fears of government surveillance were a significant concern, even if the information being gathered was not necessarily being put to improper use by officials. “The feeling that the Internet is looking over your shoulder is now universal,” he said. “But it’s the government that has the techniques and tools to look in at will.”“现在,互联网严密监视着你是一种普遍的感觉,”他说,“但政府有各种技术各种方法,随心所欲地进行窥探。”He added, “We are really putting into place a system that might be used by more tyrannically inclined governments in the future.” The survey found that mass surveillance by the ed States government had damaged its reputation as a defender of free expression, with some 36 percent in other “free” countries and 32 percent in “less free” countries saying freedom of expression had less protection in the ed States than in their nations. The 2013 PEN survey of American writers provoked some comment that writers’ fears were overblown, and there was little evidence that the American government took particular interest in the communications of writers.2013年美国笔会在美国作家中所做的调查,也引发一些,认为作家的担忧夸大了,没有什么据表明美国政府对于作家间的交流有着特别的兴趣。But Ms. Nossel said that subjective perceptions of surveillance matter, particularly among those who rely on freedom of expression as “their lifeblood.” “Just the fact that so many writers say they are deeply concerned and are actually changing their behavior is significant,” she said. “Whether we consider it justified or not, it isn’t something that should be ignored.”“事实上有这么多的作家声称他们对此深表关切,而且有那么多人因此而变得谨慎,”她说道,“不管我们认为这合不合理,它都不应该遭到忽视。” /201501/352631Pavan’s favourite activity is playing football outdoors. His second favourite is playing football indoors, and in third place is practising football skills against the sofa. Reading – the pursuit that Francis Bacon claimed “maketh a full man” – comes further down the eight-year-old’s list, behind school, going to discos, buying stuff, chatting to people, watching TV and playing on his Xbox games console.8岁小男孩潘万(Pavan)最喜欢的活动是在户外踢足球,其次是在屋里踢足球,位居第三的,是在沙发上操练球技。 Would he ever pick up a book for pleasure? “No,” Pavan shoots back jovially. “If I’m bored, I will ask my mum if I can play on her phone.” By this point, I am relieved that Michael Gove is not part of our conversation at a homework club in Harlesden Library, north London. The UK education secretary has long feared that British children are “just not ing enough”. The same concern has been raised by publishers and literacy charities, which worry that new distractions – computer games, online s, social networking – are pushing books off the shelf. More than 60 per cent of 18-to-30-year-olds now prefer watching television or DVDs to ing, according to a survey for the charity Booktrust. A similar proportion of young people think the internet and computers will replace books in the next 20 years. The literacy debate received fresh impetus last October when a study from the Organisation for Economic Co-operation and Development suggested that vast numbers of young people were leaving school without the ability to well. Of the 24 industrialised countries covered by the research, England was the only one that went backwards, with literacy and numeracy skills lower among the young – those aged 16 to 24 – than the old. (The results were little better in Northern Ireland; Scotland and Wales were not included in the study.) The OECD’s hard-nosed economic concern with skills leads logically to ing for pleasure, which is closely associated with educational success. An analysis of the 1970 British cohort, tracking about 6,000 young people born in April of that year, found children’s test scores correlated more with how often they than with how educated their parents were. “Being able to a book mechanically is vital, but ing for pleasure shouldn’t be optional,” says Joanna Prior, managing director of Penguin UK. “The benefits will be reaped throughout a child’s life.” For publishers, the commercial implications of a decline in literacy are obvious. In some ways the threat to the UK’s #163;3bn book market is more fundamental than that faced by the record industry: even when people stopped paying for music, they never stopped listening to it. Literacy charities have tried various tricks to promote ing – including the Six Book Challenge, to get less confident ers in the habit; Quick Reads, which distributes short, easy texts for adults; and Premier League Reading Stars, which enlists top footballers to spend time with struggling schoolchildren. In areas such as Harlesden, such initiatives have drawn countless children and adults closer to books. But they are fragmented. So literacy charities have come together under a single “Reading for Pleasure” campaign in the hope of having greater impact, particularly in lobbying government. “We need to slightly toughen up the message,” says Prior. “There’s a literacy crisis in the country. There shouldn’t be anybody who doesn’t properly when they leave school.” Views differ on the most effective interventions. Some focus on the period in which books enter a child’s life; some on the ages of 10 and 11, when other hobbies often take over; and others see the emotionally formative teenage years as the most important. But the wider point is clear: “If you’re going to engage a er for life, you need to engage them before they become an adult,” says Louisa Livingston, head of consumer insight at Hachette UK. That means making children comfortable around books, with soft-furnished areas in classrooms and personalised guidance so that each child can be directed to the books he or she might enjoy. School librarians, whose ranks are at risk from government funding cuts, should be seen as “book experts”, says Penguin’s Prior. Above all, while successive governments have fretted about test scores, publishers want politicians to recognise the importance of ing for pleasure. If that can be achieved, they argue, imaginative teaching methods will surely spring forth. The social context is crucial. A 2011 National Literacy Trust survey of British children found that a third of respondents did not have books of their own. Of these, 19 per cent were below the ing level expected for their age, compared with 7.6 per cent of those who did own books. 7.6%。Inequalities were also picked up in the OECD study. England and Northern Ireland showed “one of the stronger associations between socio#173;economic background and literacy proficiency” among the countries tested. What’s more, the report concluded, “unlike most other countries, this association is stronger among young people than among the overall adult population”. Such issues have come to the fore in a parliamentary inquiry into adult literacy now under way. “Whether or not you use the word ‘class’, it is about home environments,” Helen Casey, an adult literacy expert, told MPs at its first session last month. “Kids spend 12 per cent of their time in school; they spend the rest of their time not in school. The culture they grow up in is really important,” said another expert, David Hughes. Yet at least one of the MPs seemed sceptical of that approach, suggesting that amounted to “excuses for the education profession”. That is not the only apparent disconnect between educationalists and politicians. Gove wants children to study more books, and has amended the GCSE syllabus accordingly. His critics worry that will turn children away from ing for pleasure. “Teachers almost don’t have time for children to be relaxed around books,” says Sue Cowley, an educational author. “Reading starts to become something that’s done to be measured, not done out of choice.” Some also detect an unwelcome snobbishness in Gove’s desire for the books to be harder – he has expressed particular gripes against John Steinbeck’s Of Mice and Men (too short) and Stephenie Meyer’s Twilight series (too easy). “If someone’s ing a football magazine, shouldn’t we just be happy that they’re ing?” says Richard Mollet of the Publishers Association. “If a child is ing and enjoying the immersion, then surely that’s the most important thing.” While that debate rumbles on, a wave of technological change means that children may find it harder to reserve time for ing. Technology has helped people to enjoy books – a backlit e-er means no more torches under the duvet – but it has helped other media more. Long train journeys once meant hours ing or hours gazing out the window. Now, with an iPad, they can mean computer games and the previous evening’s TV programmes. One option for publishers is to follow the music industry, encouraging authors to do even more events and engage more with social media so as to create “touchpoints” with their fans. Another is to adapt the books themselves. Interactive ebooks aly offer multiple endings (a digital variation on the theme of “if you choose door A, turn to page 78”), and publishers are investing in apps that seek to lure infrequent ers with and audio embellishments. “There’s very much an experimental attitude at the moment,” says Jake Manion, creative director at animation company Aardman, which worked on HarperCollins’s The Hobbit app. “Smartphones haven’t been around that long and people are still writing the stories in the way they’ve always done.” The biggest change, Manion argues, will come in “five to 10 years”, by which point writers will be “so familiar with the technology that they’ll be creating stories in different ways”.“目前这完全只是抱着试试看的态度,”杰克#8226;马尼恩(Jake Manion)说,他是动画公司阿德曼(Aardman)创意总监,该公司曾开发了哈珀柯林斯(HarperCollins)出版小说《霍比特人》的应用软件。 And then, perhaps, football practice might wait. /201405/295053

La Roca del Vallès was once little more than a sleepy Catalan village (pop. 7,000) surrounded by farmland, 35 minutes northeast of Barcelona. Now, that farmland is the home of outlet mall La Roca Village, a purpose-built simulation of a Catalan town, packed with high-end outlet stores. Last year, La Roca Village attracted 3.3 million shoppers, mostly foreigners, which makes it the most visited tourist attraction in Barcelona—superseding even Catalan architect Antoni Gaudí’s epic and internationally famous Sagrada Familia cathedral. (SagradaFamilia cathedral)。Travelers have always shopped, for handicrafts, unfamiliar foods, or silly t-shirts. But in recent years, as citizens of BRICS nations and other developing countries have begun to travel, vacation shopping has changed. For many newbie travelers, buying brand-name goods has become a central point of tourism, a way to participate in developed world consumerism and show the folks back home they’ve indeed been abroad. The boom has been most notable among Chinese travelers, who’ve celebrated their new ability to globetrot with sights-and-malls bus trips across the U.S. and shopping-heavy versions of the old Grand Tour of Europe. Next year, Chinese travelers are expected to buy more luxury goods abroad than tourists from all other countries combined. But shopping tourism is far from a Chinese phenomenon, and Spain in general—and Barcelona in particular —offers an object lesson in how visitor flows from developing countries have changed the face of tourism. Spain ranked second in the world in 2012 for revenue from tourism spending, according to a new report from the UN’s World Tourism Organization, with .1 billion spent on shopping in the country by visitors from outside the E.U. And Madrid and Barcelona were tied for second, behind London, in a shopping index ranking of European cities put together by the Economist Intelligence and Global Blue, a tourism shopping tax refund company. While only 250,000 Chinese people visited Spain last year, 1.6 million Russians did, an increase of 31.6% over 2012. “Because brands are so global and because emerging markets are emerging, there are aspirational factors,” says Michael Goldenberg, the New York-born head of the Spanish operations of Value Retail, which owns the La Roca mall and eight others in Europe. “Why are they all coming to Europe on vacation? To see where culture and sophistication come from. And they want to live like Europeans. Part of that is fulfilled by buying brands.” Goldenberg was working in real estate investment banking at Bankers Trust when the firm invested in Value Retail’s first shopping village, Bicester Village in the U.K., and he joined the company in 1996, at age 27. As we walk down the central avenue of the mall, the lanky Goldenberg points out the architectural details that mimic small-town Catalonia. We start our tour in the central plaza surrounded by government-style buildings (a Loewe outlet sits on the ground floor of the town hall), then pass through a comfortable bourgeois neighborhood and into a very tidy version of a factory zone. The streets are covered in cobble or large paving stones, the roofs are tiled, the colors tend toward the creams, and the plazas between the blocks feature sculptures in the style of Antoni Gaudí. This architectural recreation offers the sensation of a local cultural experience, which may be key for visitors who are passing a sizable chunk of their vacation at the mall. Sixty percent of the shoppers are tourists and they spend an average of four hours here, Goldenberg says. Value Retail’s others malls also simulate the local culture: the English mall near the Cotsworlds, outside Oxford, mimics a village in southeastern England, while one near Parma, Italy is based on Verdi’s operas. “We try to democratize luxury,” Goldenberg tells me as we walk through the industrial section of the town. “Notice all the doors are open? At a luxury store on Passeig de Gracia [Barcelona’s equivalent of Manhattan’s Fifth Avenue], the doorman sort of looks you over before he opens the door.” Value Retail identifies major cities with sophisticated locals and plenty of tourists, and then builds a mall far enough outside of town so as not to compete with the brands’ full-price city stores. In Barcelona, the mall is 25 miles outside the city; in London, it’s 75 miles. When it opened, many expected La Roca Village to fail. It was in the middle of nowhere and outlets were an unproven concept. The first years were indeed slow; 270,000 people came during the six months it was open in 1998, less than 10% of the number that visited in 2013. But as outlets caught on in Europe and tourism in Barcelona boomed—7.6 million visitors stayed in the city last year, up from 2.5 million in 1993—so did the mall. The portion of La Roca’s shoppers who are tourists increased from 38% in 2007 to 60% today, and in 2009, the mall launched a bus service from downtown Barcelona. It now offers ten 20-euro round trips a day. A just-opened 30 million euro expansion led to the addition of 40 new stores at the mall. A recent job fair offering 300 jobs at the center attracted 1,500 aspirants. And Chinese tourists are beginning to come en masse: Barcelona got about 150,000 Chinese visitors last year, Goldenberg says, and 100,000 of them came to La Roca Village. Goldenberg would not break out the Spanish mall’s sales, but he said the combined revenues in all Value Retail malls was 1.9 billion euros in 2013. The parent company is now taking its shopping experience to the developing nations that supply so many of its customers. Baoding should be made into a regional hub city as part of the Beijing-Tianjin-Hebei cluster as the framework of a regional hub city has been established after the recent administrative division adjustment in the city, according to Yan Liying, the deputy mayor of Baoding, Hebei. Authorized by the State Council, Baoding made some changes to its administrative divisions, expanding them from 3 to 5. Accordingly, the urban area in Baoding has expanded to 2,531 sq km from 312 sq km. /201505/377531China’s stock market sell-off abated on Thursday morning, as Beijing rolled out further measures to boost liquidity and calm investor nerves following days of sharp share price falls. Early trading on the Shanghai Composite was choppy but the index was up 0.6 per cent by 11am local time. Shenzhen had gained 2.4 per cent, while the small cap ChiNext board had added 1.9 per cent. 2.76%。In Hong Kong, the Hang Seng rose 2.9 per cent, while the China Enterprises index was 3 per cent higher. 3.58%。The break from the sell-off followed another raft of measures from Chinese authorities aimed at halting a share rout that has wiped trillions of dollars off the value of the country’s equity markets. On Thursday morning, China’s banking regulator said it would allow lenders to ease margin requirements for some wealth management clients, and encouraged banks to offer financing to companies seeking to buy their own shares. That came on the heels of a new rule imposed late on Wednesday by the securities regulator banning investors with shareholdings of more than 5 per cent in a company from selling shares. The restriction also applies to senior executives and board members of listed companies. The China Securities Regulatory Commission said separately that China Securities Finance Corporation, a government-backed fund, would provide “abundant liquidity” to help steady the market. State-owned enterprises have also been directed towards share buy-backs. So far, 292 companies have pledged to buy their own stock, according to state media. With Beijing’s efforts to underpin the market having limited effect in the face of panicked retail investor selling, many analysts think further steps will be taken if downward pressure returns. Thursday also saw dozens more companies request their shares be halted from trading, adding to the list of more than 1,400 companies that have has suspended their stock. More than half the companies listed on China’s two stock exchanges are currently not trading as a result. China’s stock market rout began in mid-June following a clampdown on margin finance — the use of borrowed money to buy shares. That has led to a rapid unwind of leveraged trades, a process many believe is still far from reaching its end. “The deleveraging process is likely to continue in the near term and therefore the [domestic] share market will likely remain volatile,” said analysts at UBS. /201507/385245

‘As precious as gold ...’ That was howthen-president Hu Jintao described Caofeidian during his visit in 2006. It waspledged to be ‘the world’s first fully realised eco-city’ – yet 10 years andalmost 0bn later, only a few thousand inhabitants have moved to this land reclaimed from the sea ... /201409/326536Tony Blair is looking to open an office in Abu Dhabi, the increasingly assertive oil-rich emirate, in an apparent bid to expand his role as a behind-the-scenes business and political broker in the Middle East. The former UK prime minister, whose reputation in the region remains controversial, is said to be very close to the Crown Prince, Sheikh Mohammed bin Zayed al-Nahyan, who shares his outspoken anti-Islamist views. “There is chemistry between him and Mohammed bin Zayed,” a Blair friend says. Mr Blair, who has a business contract to advise Mubadala, one of the Abu Dhabi sovereign wealth funds, also backs the anti-Islamist leaders in Egypt where three Al Jazeera journalists accused of backing the Muslim Brotherhood were on Monday sentenced to seven years in prison. People familiar with his work have told the Financial Times he has commissioned experts to write a report on the Brotherhood and the allegations by Egypt’s military leaders and its Gulf supporters that it is involved in terrorism. Mr Blair’s aides say the “briefing document” is for his personal use, while an Abu Dhabi spokesman insists it has not commissioned such a report. But people familiar with the briefing say it is being done on behalf of the UAE leadership. One aide insists Mr Blair is not seeking business contracts in the Middle East. While he has not yet signed on an office in Abu Dhabi, the aide says it would make sense to have a permanent presence in the UAE to service existing governance contracts, including with Kazakhstan and Romania. Other people familiar with Mr Blair’s plans, however, say he is looking to act as an intermediary between the oil-rich Gulf and other parts of the world. His most high- profile governance contract in the Middle East was helping to reform the Kuwaiti prime minister’s office in 2009, but the project was closed down in 2012. “He sees a lot more business for Tony Blair Associates in this region,” says a person who knows Mr Blair well. This is the London-based commercial arm offering advice to companies and counsel on reform to governments. The shadow of the 2003 Iraq war, which Mr Blair championed, still looms over his post-prime ministerial life. Last week he was criticised from Right and Left in Britain after he defended the US-led invasion against charges it paved the way for the current convulsions in Iraq. The controversy has not prevented him from using his web of contacts to cement friendships in the region including in Abu Dhabi where relations with the UK have frayed over Britain’s less hostile stance towards regional Islamist parties. Like the government in Abu Dhabi, Mr Blair has spoken out in support of last year’s military coup in Egypt, which toppled an elected president from the Brotherhood, describing it in a recent speech as a “necessary rescue of a nation”. Mr Blair has long made clear he believes in taking sides in the Middle East and that he sees the region through the prism of a conflict between modernity and radical Islam. In his speech at Bloomberg in April, he said what was happening in the region represented “the biggest threat to global security in the early 21st century”. He also called for supporting governments in the Gulf – even though they are for the most part autocratic and intolerant of dissent. In Mr Blair’s view, however, these western allies are “promoting the values of religious tolerance and open, rule-based economies.” Since Egypt’s coup last year, the Brotherhood, an 80-year old organisation with followers across the region, has faced relentless repression. People with knowledge of the report on the Brotherhood say Mr Blair is helping Abu Dhabi advise Egypt’s Abdel Fatah al-Sisi, the new president who led last year’s coup, on economic reform. “Abu Dhabi officials want Blair to help convince Sisi on economic reforms. Sisi can be impressed by Blair,” said one person familiar with the matter. The Blair report is separate from a UK government inquiry into the Brotherhood, which was announced by David Cameron, the prime minister, in March. Western diplomats say the move followed Abu Dhabi pressure on London to take a tougher stance towards the Islamist group. The government probe is unlikely to recommend measures that will satisfy Abu Dhabi, such as a ban on the organisation. One diplomat familiar with Mr Blair’s report says it will be used to “inform” the British public and other western nations about the “dangers” of the Brotherhood. /201406/307967

The ordinary chicken egg is one the world#39;s most perfect foods. Eggs are a cheap, abundant, delicious source of protein. They#39;re also extremely flexible, capable of performing as many as 22 different culinary functions in a wide array of foods. In cakes, eggs trap gasses in the batter, creating a light, airy texture. In mayonnaise, egg yolks stabilize an emulsion of oil and an acid. In a meatloaf, they bind disparate ingredients together. In a custard, they thicken liquids to form a gel. There#39;s only one problem with eggs. #39;They are fantastically inefficient, #39; said Josh Tetrick, the founder of a San Francisco food-technology startup called Hampton Creek Foods, only he uses an F-word other than #39;fantastically.#39;鸡蛋只有一个缺点。 Egg production is the fastest-growing segment of intensive agriculture as demand skyrockets in emerging economies. Mr. Tetrick points out that 1.8 trillion eggs are laid globally each year, and chicken feed--much of it soy and corn, which require vast amounts of land, water, and fossil fuels to grow--accounts for 70% of the cost of an egg. Mr. Tetrick thinks he can do better. He has secured financing from some of the tech industry#39;s largest venture backers to do what most egg-loving foodies, myself included, consider both sacrilegious and impossible: He wants to replace the chicken egg with plant-based protein sources. Actually, that#39;s underselling the goal: Hampton Creek wants to #39;surpass#39; the egg, to make eggless foods that taste better, are free of cholesterol, last longer on the shelf, are more ecologically sustainable and humane, and are far cheaper than their eggy counterparts. This is a gargantuan goal, and Mr. Tetrick concedes that the company isn#39;t close to achieving it. But Hampton Creek is far enough along to illustrate the power of what you might call #39;food engineering.#39;这是一个宏伟的目标,蒂特里克也承认,他的公司还没有接近实现这一目标。 To create its eggless products, the company#39;s battalion of biochemists, food scientists, and software engineers are modeling their efforts on processes first used in drug companies and the tech industry. If their plan works--and my taste buds suggest it might--Hampton Creek may show how the software and biotech industries#39; innovation techniques might alter sectors far beyond. Take Hampton Creek#39;s cookie dough, which will go on sale in February. In a blind test, I was able to tell the difference between Mr. Tetrick#39;s cookies and those containing eggs. The eggy ones were slightly browner. Yet I preferred the eggless cookie#39;s taste and texture. They weren#39;t too sweet, were slightly salty, and achieved just the right balance between crunchy and chewy. And the cookies are almost a side-benefit of the dough. Because the dough has no eggs, you don#39;t even have to bother baking it. Indeed, Hampton Creek#39;s product is called Eat the Dough. It comes in a carton with a spoon set in the lid, like something you#39;d buy from the ice-cream man. Mr. Tetrick grew up in Birmingham, Ala., on a diet of #39;chicken wings and gristle.#39; He#39;s now a vegan and, while animal welfare was part of his motivation for founding Hampton Creek, he has been careful to play down that goal for his company . #39;That#39;s a losing proposition in the marketplace,#39; he said. For Mr. Tetrick there are many more hard-nosed reasons for creating a better egg substitute. To borrow a favorite tech-industry slight, eggs can#39;t scale. He argues that they require too many resources for their production to grow indefinitely. And he has persuaded several tech luminaries to join his mission. Hampton Creek#39;s investors include Khosla Ventures, Bill Gates, and Peter Thiel#39;s Founders Fund. (Founders Fund)。Altogether, Hampton Creek has raised million, with which Mr. Tetrick believes it can eventually render eggs #39;obsolete#39; across every dimension, including price. At the moment, Hampton Creek#39;s egg replacement costs about 39 cents a pound, about half the price of a pound of liquid eggs. #39;We want to drive the price through the floor so radically that it would be silly to consider anything else,#39; he said. How can Hampton Creek do that? Josh Klein, its director of biochemistry Ramp;D, likens the company#39;s egg-replacing strategy to the process a drug company might use to fight disease. Every day, the lab screens dozens of new plant species in search of applications that might be similar to those of eggs. Armed with the database, they mix and match plants to create new, eggless foods. Then, they prototype, taste, and repeat. In a way, Hampton Creek is treating food like software, borrowing various bits of code from different kinds of plants. It#39;s a novel, mathematical way to think about food--one that confounds the sensibilities of those who reject #39;processed foods#39; but may ultimately realize the dream of providing sustainable, tasty, healthy and affordable food for the entire planet. So far the results are quite good. Hampton Creek discovered a specific kind of yellow pea that has fantastic powers of emulsion, leading to a mayonnaise that the firm claims beats leading brands in taste tests. I found the texture exquisitely creamy and, compared with eggy store-bought mayo, Hampton Creek#39;s mayo had a cleaner, less aggressive flavor profile. Mr. Tetrick says that, in large quantities, he can make eggless mayo 10% cheaper than conventional egg mayo. Driven by price, many Whole Foods stores across the country have switched to Hampton Creek#39;s mayo in their store-prepared foods (like the potato salad). But at retail, Hampton Creek#39;s mayo isn#39;t very cheap: It sells for .50 or .49 a jar at most Whole Foods stores. That#39;s about the same price as egg-based mayo, but Mr. Tetrick says that Hampton Creek has room to cut its prices substantially. The company#39;s next goal is to make an eggless liquid that, when fried, turns into scrambled eggs. Right now, the product is in the prototype stage. One of Hampton Creek#39;s scientists cooked up a plate for me, and I found the fake scramble slightly rubbery and grainy, more like a spongy crepe than an egg. But Mr. Tetrick says he believes that it won#39;t be long till the company creates the perfect eggless scramble. #39;The chicken is great, but it isn#39;t getting any better,#39; he said. In other words, it#39;s a sitting duck. /201311/266178
